The history of Primitivo PGI is lost in the mists of time. Arrived in Puglia probably at the hands of the Illyrians, the Balkan population dedicated to the cultivation of the vine, began to be commercialized in the Mediterranean by the Phoenicians. Today it represents, together with Negroamaro, the most famous and requested variety among the wines of Salento, synonymous with quality and tradition linked to the typical planting layout, called “Alberello Pugliese”. It results in a very low average yield per hectare, but of very high quality.
The early harvest takes place by hand. The grapes are then macerated in horizontal rotary fermenters and the wine obtained is aged for 6 months in French oak barrels. A further refinement in the bottle follows.
