Grapes are handpicked at the end of October and fermented into red wine in stainless steel vats at controlled temperature with ambient yeasts; maceration last for 2 weeks.
Biondi is one of the long-established producers in the Mount Etna appellation, with an illustrious family tradition for high quality viticulture that goes back to the last decade of XIX century, when the estate was founded by the ancestors of today’s owner Ciro Biondi.
Biondi reached worldwide recognition in the period between WWI and WWII. During the 1910′s the winery collected an impressive series of international awards [Casale Monferrato 1910, Paris 1913, Lion 1914, Cuneo 1917, Milan 1919], and the estate-bottled wines were shipped all over Europe and even as far as the United States.
Wine production has been discontinued from WWII up to the early 90′s, when last-generation Ciro Biondi put an end to the period of stall and abandonment and invested new capitals to revive the family tradition for quality viticulture. Biondi’s estate vineyards surely rank among Etna’s finest and oldest, stretching across the eastern and southern slope of the volcano, in prized sites such as Ronzini, Ilice and Gurna, all concentrated in the commune of Trecastagni, at 600-800 meters of altitude.
Dott. Salvo Foti contributes his unparalleled expertise and sensibility in the cellar, taking care of the vinification in a spirit of thorough loyalty to local traditions yet with an eye open on elegance and cleanliness. Biondi Etna Rosso ‘Outis’ is a blend of Nerello Cappuccio and Nerello Mascalese from ungrafted vines 80 to 130 year old.
